Farsed Fesaunt

In this recipe, roast chicken is served with an interesting apple, fig and oatmeal stuffing flavoured with herbs. Serve with vegetables.

Ingredients:

1/2 tsp. Basil
1/2 tsp. rosemary (crushed)
1/2 tsp. Thyme
3/4 tsp. Salt
2 cups raw oats
3/4 cup chopped dried apple
half a lemon
3/4 cup chopped figs
2 cups beef stock
One whole Chicken, about 5lbs (2.2Kg) in weight
2 tablespoons Butter
2 raw apples

Method:

Make a stuffing by mixing all the herbs with the oats, dried apple and figs and then stirring in the stock.

Stuff the chicken is then stuffed with the mixture.

Rub the chicken skin with butter and roast in a preheated oven set at 375F for around 2 hours or until the chicken becomes very tender and the juices run clear.

Peel and core the raw apples, grating the removed peel finely. Slice the peeled apples into small slivers and mix with the grated apple peel. Add the lemon juice and mix well.

Once the chicken is cooked, remove the stuffing from the cooked bird and mix in the fresh apple and grated peel mixture. Serve the chicken accompanied by the stuffing.
