Sack Posset

Sack posset was the ultimate comfort food for adults, lulling them off to sleep after a heavy meal.

Ingredients:

5 egg yolks
2 egg whites
1/4 pint/150 ml dry sherry
pinch cinnamon
pinch ground mace
pinch grated nutmeg
1 pint/500 ml single cream
3 oz/75 g sugar

Method:

Beat the egg yolks and whites with the sherry and spices.

Pour the mixture into a large pan and gently heat, stirring all the time. Do not allow the mixture to thicken.

Heat the sugar and cream together and just as it rises to the boil, pour it from a height into the egg mixture. Do not stir, but allow the posset to stand in a warm place for a few minutes.

Sprinkle with extra sugar before serving.
