Pear Tartes

This tasty desert recipe is from The English Housewife, by Gervase Markham.

Ingredients:

3lb small pears
enough home-made shortcrust pastry to line and cover a pie dish
3 cups white wine
1 cup sugar
1 tsp. cinnamon
1/2 tsp. cloves

Method:

Mix the sugar and wine together in a bowl.

Peel, core and quarter the pears and place into a cooking pot. Pour the sugar and wine mixture over the pears and cook until the liquid turns into a syrup. This takes about 30 mins.

Take the pears out of the syrup and allow them to cool.

Heat the oven to a temperature of about 450F. Place the pears into a pie dish lined with home-made shortcrust pastry. Sprinkle on the cinnamon and cloves.

Cover the pie with the remaining pastry and trim. Make a vent hole in the centre of the pie cover.

Place in the oven to cook for about 35 mins.

Remove from the oven and pour in the remaining wine and sugar syrup through the vent hole in the pie crust, shaking gently to make sure that the syrup is distributed evenly around the pie.

Return the pie to the oven to bake for another 45 mins. Serve warm.
