Hippocras

Rost chicken served with a sauce made from wine and the 'sweet powder' which is described in a previous recipe.

Ingredients:

A chicken large enough for 6 people
1 cup red wine (as sweet as possible)
2oz sweet powder (made according to the recipe)

Method:

Roast the chicken, before cutting it up into smaller pieces. Set aside the cooking juices to be used later.

Combine the wine, sweet powder and about 2 tablespoons of the cooking juices from the chicken. Slowly bring the mixture to the boil and allow to simmer for a few minutes then pour over the cooked chicken before serving.
