Almond Cookies

Crisp, golden brown cookies flavoured with almond, a nut which has been used in cooking for many centuries.

Ingredients:

1 cup ground almonds
approx. 1 cup flour
1/2 cup white sugar
1/2 cup rosewater
1/2 tsp. ground anise seeds
1/2 tsp. salt
1 tbsp. almond oil
1/2 tsp. water

Method:

Moisten the ground almonds with the rosewater, before adding a little fresh water to form a soft almond paste.

Then add the sugar, salt, anise and 1 tablespoon (15ml) of almond oil and mix in well.

Stir in enough flour to stiffen up the paste so that it can be flattened onto a floured surface. Try not to make the paste too dry.

Use cookie cutters to cut out some shapes. Prick the shapes with a skewer or a fork then place them in a well oiled baking tin.

Bake in a moderate oven for approximately 20 mins or until the cookies turn a lovely golden brown colour and are cooked right through.
